Looking
for a quick dinner to throw on the grill this summer? This just might be it. Simple to prepare and it doesn’t require
hours of time to marinate the meat. The
chicken turns out moist and flavorful. Serve
it with a green salad and grilled corn-on-the-cob for a delicious summer
dinner.
Grilled
Lemon Chicken
4
teaspoons dried parsley
1
teaspoon garlic powder
½
teaspoon lemon zest
2
tablespoons fresh lemon juice
1
cup Chardonnay or other dry white wine
Four 4 oz. boneless, skinless chicken breasts
Lemon
slices for garnish (optional)
Directions:
Combine
first six ingredients in a shallow glass baking dish. Add chicken, turning pieces to coat. Cover and marinate in the refrigerator for at
least one hour. Turn chicken pieces
every half hour.
Remove
chicken from marinade. Set aside.
Heat
the marinade in a small saucepan until it just begins to boil. Set aside.
Preheat
the grill to medium heat. Place the
chicken on the grill and cook 5 minutes on each side until the chicken is done,
basting with the reserved marinade.
Garnish
with lemon slices, if desired.
